Grapes harvested from 50-year-old vines in a north-facing parcel. The grapes are directly pressed for three hours, then fermented and aged in stainless steel vats. Bottling takes place in June of the following year, with 35mg/L of sulphur added at bottling. A golden hue in the glass, with melon, fennel, anise and citrus aromas on the nose, followed by a rich, textured palate marked by sea salt and bitters.
