Grape: Chardonnay

Region: Chablis, France 

Chardonnay from vines planted over red clay soils, east of Chablis. The fruits are picked late and manually, using small boxes as protection. In the cellar, they undergo a long spontaneous fermentation with native yeasts, before being aged on lees for 18 months in old barrels. A small amount of sulphur at bottling. Ripe fruits on the palate with notes of clementine, grapefruit and Kumquat and a vibrant acidity that cuts through. Elegant and refined.
