Domaine Athénaïs, Bourgogne Aligoté 2021

Grape: Aligote

Region: Burgundy, France 

Aligoté, hand-harvested from east- and southwest-facing plots, grown over limestone and clay soils at 250m above sea level. The grapes are pressed in a pneumatic press over a long, gentle cycle and fermented with indigenous yeasts, followed by light static cold settling before ageing in oak barrels for 12–18 months. Bright citrus and wet stone on the palate; mineral and fresh.
