Grape: Pinot noir

Pinot Noir from 25 – 40-year-old vines, grown on limestone, clay and basalt. 80% of the fruit is destemmed, and 20% goes through a whole bunch maceration, with pigeage and remontage during the peak of fermentation. Aged in a mix of stoneware jars and barrels and blended a month before bottling. More full-bodied than their other Pinot Noir wines made with whole bunch of maceration, but still bright with lots of fruit and a touch of earthiness.
