Jurançon Noir, a native varietal similar to Folle Blanche and Cot (Malbec). The fruit undergoes a five-day semi-carbonic maceration in steel tanks and is bottled in spring without added SO₂. A gentle fizz upon unbottling, with a silky palate of blackcurrant and red berries.
