Sylvain Pataille is one of Burgundy’s most thoughtful and meticulous vignerons, quietly redefining what’s possible in Marsannay. Today, he farms over 15 hectares biodynamically, focusing on low yields, native yeast fermentations, and minimal intervention in the cellar. Sylvain is deeply committed to the expressive potential of Pinot Noir and Aligoté, working with old vines and historic parcels.
Crafted from Pinot Noir and Pinot Beurot (Pinot Gris) vines aged between 1932 and 1949, this rosé is matured for 14–18 months in 500-litre barrels. It presents aromas of summer pudding and redcurrant, with a palate that balances freshness and density. The wine's structure and complexity make it more akin to a light red, offering a serious rosé experience that evolves beautifully with age.
